Learned this trick years ago when studying at Le Cordon Bleu Paris.👩🏼🍳Meant to share it forever.🙈 I’m reducing my reliance on non-stick pans (while using it occasionally for crepes). The parchment I use is unbleached, compostable, PFAS-free one. PS. Yes you can also heat a stainless steel pan low and slow until a drop of water bounces off of it - it will just take more time, practice and, well, a stainless steel pan.
